Preheat pot over medium heat. Pat chicken dry and rub with oil/butter, Cajun seasoning, paprika, pepper, garlic powder, and onion powder.
Sear chicken in the AlumaChef pot 3–4 minutes per side until lightly browned.
Remove chicken. Add onions, carrots, potatoes, celery, and whole garlic cloves to bottom of pot.
Place chicken on top of vegetables. Squeeze lemon over chicken and place lemon halves inside cavity.
Pour broth around vegetables. Cover with lid.
Cook on medium-low for 1 hour to 1 hour 15 minutes, or until internal temperature reaches 165°F.
Let rest 10 minutes before carving. Serve with vegetables and pan juices.
